Swai fillet with oven roasted potatos

Sunday’s are a time for friends and family. What better way to spend time with each other, then enjoying a nice home cooked meal… preferably Fish. lets get this show on the road. I had one of the most interesting tasting fishes out there. Its not your typical Salmon or Maui fish. Today i had Swai Fillet. Im sure its not among the highest quality of fishes out there in our lovely seas and oceans, but preparing has a lot to do with the amazing taste. Our chef (Mom) told me she spent several hours seasoning the fish fillet with pepper, spices, mayo, and much more.. It was left for one day in this special sauce created by the chef and was ready for cooking today in the morning. One might ask how we cooked this interesting fish? Oven cooked the beast with seasoned potatos and it was beautiful. With the oven, the possibilities are endless. The food is cooked in a more healthy fashion and nothing is subtracted from the taste.
